Thai cuisine can be challenging to do fully plant-based due to the prevalence of fish sauce and oyster sauce in many of the dishes. The team at Glur designed many of its dishes around a plant-based sauce, and the team uses a mushroom-based “oyster” sauce in many of its dishes.
